Broccoli, Leek and Spinach Super Soup

Perfect for those cold nights snuggled in front of the TV or to warm you through after a refreshing afternoon walk. This Super Soup tastes delicious and with homemade fries on the side, there’s no better dish!

2 Servings – Can be Vegan – Vegetarian


  • 1L Vegetable Stock
  • 1 Medium Sized Onion
  • 500g Spinach (washed)
  • 2 Medium Sized Leeks
  • 1 Medium Sized Broccoli
  • 2 Garlic Cloves
  • 2 Jacket Potatoes
  • Salt & Pepper

The Method

Preheat your oven to 180C and place your jacket potatoes on the middle shelf for 1 hour

Whilst baking, peel and chop your onions and fry them in a lightly oiled pan with your crushed garlic (Try not to cry!)

Add your vegetable stock and bring to a simmer

Add your broccoli and simmer for 15 minutes

Chop up one of your leeks and add it the mix along with half the bag of spinach and simmer for another five minutes

When your potatoes are done, take them out of the oven (be careful, they’ll be extremely hot!) and remove the flesh from the skins

Chop up your skins into lovely dipping sized portions, lightly cover them in oil and put them back in the oven for 15 minutes at 200C

Add your potato flesh to your soup mix.

Mix thoroughly to remove any lumps or, if you have one, use a hand blender

Add your remaining spinach and leek and simmer for another 5 minutes, adding your salt and pepper to taste!  For cheese lovers, add a bit of grated Stilton for a extra taste!

Serve in your favourite bowl on your favourite plate and enjoy!
