Invented on the spot when I was rushed for lunch, this has become one of my all time favorites. So quick to make, it’s perfect for the lunchtime rush or when those early mornings become late mornings and you need to make something fast! This recipe makes one serving but just multiply the ingredients up for however many you want to make!
1 Serving – Vegan – Vegetarian – Gluten Free
- Sourdough Loaf
- 1 Medium Sized Avocado
- 1/2 Tsp of Chili Flakes
- 8 Cherry Tomatoes
- 1 Medium Sized Lemon
- A Pinch of Salt
Get yourself a mixing bowl and mash up your avocado with a fork, adding your salt (however much you like!)
Cut your lemon into four pieces and squeeze one segment into the bowl
Add your chili flakes and mix thoroughly
Cut your sourdough into thickly cut slices and toast using your toaster or grill (remembering to turn them over!)
Chop all of your cherry tomatoes in half
When your toast is ready, spread your avocado mix over the bread and push your half tomatoes into place! Season with a little more salt and chili if you fancy it!
Arrange on your favourite plate, take a picture and enjoy!
