Inspired by the Deliciously Ella cookbook, I immediately fell in love with this recipe. Serving to my friends and family, they absolutely adored the taste, the seasonings, completely unaware of just how good for you this meal was! Ready to eat in half an hour, you won’t have to keep hungry mouths waiting with this amazing dish!
2 Servings – Vegan – Vegetarian
- 2 Large Sweet Potatoes
- 40g Cashew Nuts
- 1 Red Chili
- 2 Tbsp Tomato Puree
- 4 Garlic Cloves
- 2 Tsp Cumin
- 1 Tsp Paprika
- 200g Green Beans
- 1 Tin of Chopped Tomatoes
- 1 Medium Sized Onion
- Salt & Pepper
Set your hob to a medium/high heat and boil a saucepan of water. Add your sweet potatoes and cook until boiled
When boiled, drain off the water and let them steam, allowing any excess water to evaporate
Mash the potatoes up in a large bowl until a reasonably lumpy texture
Crush half your garlic cloves and chop up half your chili and add to the bowl along with your cumin, paprika, cashews and your salt and pepper
Mix it all together well and when thoroughly mixed, take a handful and make the mixture into six burger shapes
Preheat your oven to 200C and place your potato burgers on a baking tray and lightly cover in oil. Put the tray in the oven and bake for 20 minutes
Whilst they’re cooking, chop up your onions and remaining garlic and chili and fry all together in a frying pan on a medium heat. Whilst chopping, trim your green beans.
After a couple of minutes, add your tin of chopped tomatoes and green beans and let the whole mixture simmer for 15 minutes or until the beans are cooked through and the sauce has thickened.
Serve all together on your favourite plates and enjoy!
