If you’re looking for a naughty treat to satisfy your taste buds then look no further! This daunting stack of vegan pancakes is not for the fainthearted! Featuring 4 layers of pancakey goodness, each with it’s own layer of chopped banana and vegan chocolate sauce, you’ll be the envy of all! I love these pancakes and the fact they are so customizable, you can fill them with whatever you want making them perfect for any mood or situation!

1 Serving – Vegan – Vegetarian
- 120g Plain Flour
- 230ml Of Organic Soy Milk
- 2 Tbsp Vegetable Oil
- 1 Tbsp Caster Sugar
- 1 Tbsp Baking Powder
- 1/2 Tsp White Wine Vinegar
- 1 Tsp Vanilla Essence
- A Pinch of Salt
Mix all of your dry ingredients together in a large mixing bowl and slowly add all of your liquid ingredients, whilst mixing together thoroughly.
When all the ingredients are added, whisk together well
Lightly oil a large frying pan and use a ladle to carefully place your mixture into the middle of the pan
Fry each pancake for 1-2 minutes on both sides or until a lovely golden brown colour.
Repeat steps until all mixture has been used, get your plate ready and as each pancake is cooking, stack your toppings on top before adding the next layer!
With mine, I melted a couple of square of dark vegan chocolate and sliced up a banana but you can serve these however you like!
