This delicious recipe is so quick and easy, it takes around half an hour (including prep). It’s super healthy and really satisfies a savory craving. With few ingredients, most being found in your cupboard and fridge, It’s quick to whip up on a busy weeknight! I served it up with a simple salad and a homemade vegan tatziki – recipe for this to follow so keep a lookout! This is definitely become one of my favourite recipes. I really hope you enjoy it as much as me!
▪ 1 avocado peeled and cut into slices
▪ 6 Mushrooms cut in half
▪ 50ml Wholebean soya milk
▪ 100g Breadcrumbs
▪ 1/2tsp Dried rosemary
▪ 1/2tsp Onion powder
▪ 1/2tsp Rock salt freshly ground
▪ Pepper to taste
step 1. Get two small bowls. In one put your soya milk and in the other place your breadcrumbs, rosemary, onion powder, salt and pepper and mix well.
Step 2. Get yourself a baking tray and line with baking paper and spray with an oil spray.
Step 3. One by one get your slices of avocado and dip it into the milk and then the breadcrumbs, coat well. Repeat with the mushrooms as well. Your may or may not use up all your milk and bread crumbs but just add more if needed.
Step 4. Bake these in an oven at 180° for 25 minutes turning halfway through! As simple as that and so delicious
